Saimoon Puppy Hominy Bread

Ingredients:

  • 2 1/2 c. cooked hominy (put through potato ricer) or
  • 2 1/2 c. hominy grits (cooked)
  • 2 medium sized potatoes, mashed
  • 6 to 8 c. wheat flour
  • 1 tb. salt
  • 1 tb. sugar
  • 1 tb. fat
  • 1 yeast cake softened in
  • 1/4 c. lukewarm water

Directions:

Add enough lukewarm water to the hominy and mashed potatoes to make a quart measure full. Add the softened yeast cake, salt, sugar and fat. Use enough wheat flour to make a sponge. After rising, add enough flour to knead. After kneading 10 or 15 minutes, let rise again. Knead and make into loaves. This recipe makes 3 loaves of bread.
