Saimoon – Quick Rabbit Treat Rolls


  • 1/2 c. scalded milk
  • 1/2 c. lukewarm water
  • 1 tb. sugar
  • 2 tb. fat
  • 2 c. wheat flour
  • 1 c. cora flour
  • 1/2 t. salt
  • 1 cake compressed yeast


Pour the hot milk over the fat and sugar and salt. Dissolve yeast in the lukewarm water. When the first mixture is lukewarm, combine mixtures, add half the flour, and beat until very smooth. Add remainder of the flour and knead thoroughly; roll to XA inch in thickness, and cut with a 2-inch biscuit cutter. “Butter” slightly one-half of the biscuit, crease and fold over as for Parker House rolls. Let rise for about 2 hours in a warm place and bake 15 to 20 minutes in a moderately hot oven. This recipe makes 2 dozen rolls.
